Jaggery is a traditional, unrefined sweetener made by boiling the sap of sugarcane juice until it solidifies into a concentrated, golden-brown product. Common in South Asia, Southeast Asia, and parts of Africa, it’s known by various names like "gur" in India, "panela" in Latin America, and "kokuto" in Japan. Unlike refined sugar, jaggery retains natural molasses, giving it a rich, caramel-like flavor with earthy undertones. It’s often sold in blocks, cakes, or granules.
